Ask your fishmonger to fillet the sea bass, leaving its skin on. Divide each fillet into 3 pieces, season the flesh with salt and pepper. Mix the spices on a plate, dip the fillets, skin down, in the spices. In a shallow casserole, with a short handle, heat the olive oil and place the fillets, skin down. Cook for approximately 3 minutes then bake for 5 minutes in a hot oven. Serve immediately.
